 1 Onion, finely chopped
 275 ml Milk (low-fat)
 1 Low-salt chicken stock cube dissolved in 575 ml of boiling water
 Salt if desired
 1 pinch Pepper
 2 Medium-sized potatoes, cubed

Heat the oil in a saucepan.

Add the finely chopped onion and fry for 1 minute.

Gradually stir in the stock, milk, salt and pepper.

To thicken, add the potatoes.

Bring to the boil and simmer for 15 minutes. Keep stirring
until thickened.
