2 medium sized Sweet Potatoes.
150 oz can of Chickpeas.
3 tbsp hot sauce.
½ cup nutritional yeast.
8 large Flour Tortillas.

Method

Bake potatoes at 400 F for 40-50 minutes.

Cut in half and scoop them out.

Place them in a blender with chickpeas hot sauce and nutritional yeast.

Add salt and pepper.

Blend to a thick puree.

Place the puree into a tortilla and cover with another.

Cook in a frying pan 2-3 minutes on each side.

Cut into 6 pieces.
